Potato Skins
A perfect starter or side dish. I have detailed the recipe for cheese and bacon skins, but many other ingredients would do just as well.

Ingredients
- 3 large potatoes
- 100g cheese, grated
- 3 rashers of bacon
Method
- Bake the potatoes in the oven for 40 minutes, until crisp.
- Cut in half and scoop out the filling, leaving a layer of about 1 cm around the edge.
- Grill the bacon and cut into small pieces.
- Mix a small amount of the potato filling with some cheese and bacon.
- Top with a little more cheese.
- Place under the grill for 3 minutes.
