Ingredients

  • 2 aubergines, sliced
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 350 g quorn mince
  • 400 g tin chopped tomatoes
  • 3 tbsp tomato puree
  • 1 tbsp mixed herbs
  • 1/2 tsp ground cinnamon
  • 500 ml cheese sauce
  • 100 g cheddar cheese

Method

  1. Sprinkle the sliced aubergines with salt and leave to stand for 30 minutes. Drain, rinse well and pat dry on kitchen paper.
  2. Heat 4 tbsp oil and fry the onions, garlic and mince until the onions are soft. Add the tomatoes, puree, herbs and cinnamon.
  3. Simmer for 10 minutes.
  4. Brush the aubergines with oil and grill on both sides until brown.
  5. Pour a layer of cheese sauce over the base of an ovenproof dish and cover with a layer of aubergines. Spoon the quorn mixture over the aubergines.
  6. Layer the remaining aubergine slices over the mince, then pour over the rest of the cheese sauce. Top with grated cheese.
  7. Bake at 200°C; for 25-30 minutes.
