Ingredients
- 2 aubergines, sliced
- 1 large onion, chopped
- 1 garlic clove, crushed
- 350 g quorn mince
- 400 g tin chopped tomatoes
- 3 tbsp tomato puree
- 1 tbsp mixed herbs
- 1/2 tsp ground cinnamon
- 500 ml cheese sauce
- 100 g cheddar cheese
Method
- Sprinkle the sliced aubergines with salt and leave to stand for 30 minutes. Drain, rinse well and pat dry on kitchen paper.
- Heat 4 tbsp oil and fry the onions, garlic and mince until the onions are soft. Add the tomatoes, puree, herbs and cinnamon.
- Simmer for 10 minutes.
- Brush the aubergines with oil and grill on both sides until brown.
- Pour a layer of cheese sauce over the base of an ovenproof dish and cover with a layer of aubergines. Spoon the quorn mixture over the aubergines.
- Layer the remaining aubergine slices over the mince, then pour over the rest of the cheese sauce. Top with grated cheese.
- Bake at 200°C; for 25-30 minutes.
