Pancakes

This is the basic recipe for traditional pancakes. Other imaginative ingredients can be incorporated.

Serves 2 (about 8 pancakes, depending on the size of the pan)

Ingredients

  • 2 eggs
  • 1/2 cup plain flour
  • 1/2 cup milk
  • sugar
  • lemon juice

Method

  1. Whisk all the ingredients together.
  2. Heat a little oil in a frying pan.
  3. Gently pour the batter mixture over the bottom of the pan.
  4. When it begins to solidify around the edges, slide a spatula under the pancake and turn it over.
  5. Cook for a further minute or two.
  6. If desired, this is the point to toss it in the air and catch it again in the pan!
  7. Place on a plate and sprinkle with sugar and lemon juice
