Mexican Chicken Drumsticks

Ingredients
- 8 chicken drumsticks
- 1 meduim onion, chopped
- 1 tsp chilli powder
- 1 tsp coriander
- 400 g can chopped tomatoes
- 2 tbsp tomato puree
- 100 g frozen sweetcorn
Method
- Heat some oil in a large frying pan, add the chicken drumsticks and cook until lightly browned. Remove from the pan and set aside.
- Add the onions to the pan and cook for a few minutes. Stir in the chilli powder and coriander and cook for a few seconds.
- Add the tomatoes and the puree. Return the chicken to the pan and simmer for 20 minutes.
- Add the sweetcorn and cook for a further 3-4 minutes.
- Serve with rice.
