Mexican Chicken Drumsticks

Serves 4

Ingredients

  • 8 chicken drumsticks
  • 1 meduim onion, chopped
  • 1 tsp chilli powder
  • 1 tsp coriander
  • 400 g can chopped tomatoes
  • 2 tbsp tomato puree
  • 100 g frozen sweetcorn

Method

  1. Heat some oil in a large frying pan, add the chicken drumsticks and cook until lightly browned. Remove from the pan and set aside.
  2. Add the onions to the pan and cook for a few minutes. Stir in the chilli powder and coriander and cook for a few seconds.
  3. Add the tomatoes and the puree. Return the chicken to the pan and simmer for 20 minutes.
  4. Add the sweetcorn and cook for a further 3-4 minutes.
  5. Serve with rice.
