Ingredients
- Juice of 1 lemon
- 4 tbsp clear honey
- 3 tbsp soy sauce
- 2 cloves garlic, peeled and crushed
- 5 tbsp oil
- 4 duck breast fillets
- 225 g long grain rice
- 1 red onion, sliced
- 1 red pepper, deseeded and sliced
- 20 g wild rocket
Method
- Mix together the lemon juice, honey. soy sauce, garlic, pepper and 2 tbsp oil.
- Prick the skin if the duck breasts all over and place then in a shallow dish. Pour over the marinade, cover and leave in the fridge for 2 hours, turning every 1/2 hour.
- Heat 1 tbsp oil in a roasting tin, and put in the duck breasts, skin side down. Cook for 10 minutes, then drain off the excess fat and turn over. Cook on the other side for 10-15 minutes.
- While the duck is baking, cook the rice as per the instructions on the packet.
- Heat the remianing oil and cook the onion and pepper over a medium heat for 5 minutes.
- Stir in the rocket and immediately remove from the heat. Stir in the drained rice.
- Serve the duck on the rice and garnish with chives.
