Ingredients
- 250 g chicken, cut into small portions
- 1 large onion, chopped
- 1 clove garlic, crushed
- 1 tbsp coriander
- 275 g tin Mexican green tomatoes
Method
- If you have a food processor, whizz together the coriander, onion, garlic, green tomatoes and the juice from the tin to obtain a coarse puree.
- If you do not have a food processor, cut the ingredients as finely as possible, then mix together.
- Place the chicken pieces in an oven-proof dish. Pour the puree over the top and place in the oven, preheated to 180°C. Cover and leave for one hour, stiring occasionally.
- Ensure chicken is fully cooked before serving.
