Serves 4
Ingredients
- 4 chicken breasts, cut into strips or 300g rump steak, cut into strips
- 2 medium onions, cut into strips
- 1 red pepper, cut into strips
- 1 green pepper, cut into strips
- Packet of 8 flour tortillas
- Salsa
- Sour cream
- Grated cheese
- Packet of taco seasoning mix
- Lime juice
Method
- Fry the strips of chicken in a little oil until cooked.
- At the same stir fry the onions and peppers.
- Mix the taco mix with a little lime juice until it is of a thick, but spreadable consistancy.
- Add the mixture to the chicken and stir until the chicken is totally covered.
- Cook for a further 5 minutes, stiring both the meat and the vegetables constantly.
- Cook the tortilla according to the packet instructions, usually microwave for about 1 minute.
- Once everything is cooked, place in large bowls on the dining table.
Eating Fajitas
- Take a warm tortilla.
- Place meat and veg down the centre.
- Add some salsa, sour cream and grated cheese according to taste.
- Roll the tortilla up and eat with you hands.
Beware, this can get a little messy!!
