Enchiladas

Ingredients
- 1 lb mince
- Jar of enchilada sauce
- Packet of 8 flour tortillas
- Salsa
- Sour cream
- Grated cheese
Method
- Brown the mince in a frying pan.
- Add half the jar of enchilada sauce.
- Simmer for 10 minutes.
- Spoon the mixture to the centre of each of the tortillas. Fold each one into a parcel and place in an oven-proof dish.
- Pour the remaining enchilas sauces over the wrapped up tortillas.
- Sprinkle the grated cheese over the top.
- Bake in a pre-heated oven at 200°C for 20 minutes.
- Put the encliadas onto plates, top with sour cream and salsa.
- Serve with a crisp salad or rice.
