Serves 4

Ingredients

  • 1 lb mince
  • Jar of enchilada sauce
  • Packet of 8 flour tortillas
  • Salsa
  • Sour cream
  • Grated cheese

Method

  1. Brown the mince in a frying pan.
  2. Add half the jar of enchilada sauce.
  3. Simmer for 10 minutes.
  4. Spoon the mixture to the centre of each of the tortillas. Fold each one into a parcel and place in an oven-proof dish.
  5. Pour the remaining enchilas sauces over the wrapped up tortillas.
  6. Sprinkle the grated cheese over the top.
  7. Bake in a pre-heated oven at 200°C for 20 minutes.
  8. Put the encliadas onto plates, top with sour cream and salsa.
  9. Serve with a crisp salad or rice.
