Serves 4

Ingredients

  • 1 tbsp butter
  • 50 g mushrooms, chopped
  • 4 eggs
  • 4 tbsp single cream
  • chopped parsley

Method

  1. Grease 4 small oven-proof dishes, e.g. a Yorkshire pudding tray.
  2. Melt the butter in a small pan. Add the mushrooms and fry for 3 minutes. Divide between the dishes.
  3. Break an egg into each dish, sprinkle with salt and peper and top with cream.
  4. Cook in a preheated oven at 190°C for 30 mins.
  5. Serve hot, sprinkled with parsley.
