Ingredients

  • 285 g plain raising flour
  • 200 g butter
  • 140 g soft brown sugar
  • 250 g dried dates
  • 2 green apples, peeled, cored and chopped
  • 140 g rolled oats

Method

  1. Preheat the oven to 190°C. Line a 28 cm X 18 cm cake tin with baking paper.
  2. Put the dates, apples and 4 tbsp water in a small pan. Cover and cook for 10-15 minutes until the fruit is mushy.
  3. Turn into a bowl and leave to cool for 15 minutes.
  4. Put the flour and oats in a large bowl. Rub the butter into the flour, then stir in the sugar. Sprinkle on 2 tbsp water.
  5. Put half the mixture into the tin and press down firmly with the back of a spoon. Spread the date and apple mixture on totop, then srinkle the rest of the oats. Press down lightly.
  6. Bake for 30 minutes. Leave in the tin to cool, then remove and cut into slices.
