Chicken Madras

Ingredients
- 4 chicken breats, cubed
- 1 onion, chopped
- 1 clove garlic, crushed
- 3-4 tbsp Madra curry paste
- 400 g can chopped tomatoes
- 150 ml chicken stock
Method
- Fry the onion and garlic in a pan for 2-3 minutes until softened.
- Add the chicken to the pan and cook until browned.
- Stir in the Madras paste and cook for 1 minute.
- Add the tomatoes and stock. Bring to the boil and simmer for 20-25 minutes.
- Season to taste and serve with pilau rice.
