Chicken Madras

Serves 4

Ingredients

  • 4 chicken breats, cubed
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 3-4 tbsp Madra curry paste
  • 400 g can chopped tomatoes
  • 150 ml chicken stock

Method

  1. Fry the onion and garlic in a pan for 2-3 minutes until softened.
  2. Add the chicken to the pan and cook until browned.
  3. Stir in the Madras paste and cook for 1 minute.
  4. Add the tomatoes and stock. Bring to the boil and simmer for 20-25 minutes.
  5. Season to taste and serve with pilau rice.
